Tonight’s Dinner: Japanese Curry

We haven’t had curry in a while and I needed to make something that we could eat leftover tomorrow as well. Curry is great because it’s filling, delicious, and full of veggies and protein. We usually use either chicken or thinly sliced pork chops, plus garlic, onion, mushrooms, carrots, and red potatoes. It always makes enough to have for dinner for two or three nights. By the way, it’s also really good to add cheddar cheese in between the curry and rice, when you serve this. S always eats it that way.

We love leftovers because it means less time spent running to the grocery store and less time spent preparing meals. When you have a little baby, it’s nice to be able to just reheat food on some nights.

Fortunately, E was very patient tonight, “playing” on the floor while I made dinner. ♡
