Tonight’s Dinner: Hiyashi Chuuka

“Hiyashi chuuka” is literally translated as “cold Chinese,” but is actually a Japanese dish consisting of cold ramen noodles with various cold toppings and a soy sauce or sesame dressing. Since it’s a cold dish, it’s usually eaten in the summertime.

We like it with finely chopped ham, cucumber, and omelette strips, but you could add tomato, carrots, or chicken as well. This time we tried it with the sesame dressing and I think we liked it the best. It’s also delicious to add a little mayonnaise and then mix the whole thing up like a colorful salad.
